Kilchoman single cask release finished on a sauternes barrel. This edition is specially made on the occasion of the 25th anniversary of the importer Bresser & Timmer. Distilled on April 26, 2012, it matured in a bourbon hogshead followed by a finish of about half a year in Sauternes cask # 212/2012. The malt was peated to a level of 50 ppm. It was bottled on June 15, 2018 at a cask strength of 58.3%. The whiskey is non-chill-filtered and without the addition of dyes. Limited bottling of 267 bottles. Established in 2005, Kilchoman Distillery is Islay's newest, smallest and most westerly distillery. Kilchoman, (pronounced kil-"ho-man) is a farm distillery and the first to be built on Islay Island for 124 years. Kilchoman gives everyone the opportunity to come and see everything related to the distilling of malt whiskey; from barley to bottle, according to the best grass-roots traditions. Anthony Wills built his distillery in the vacant buildings of Rockside Farm, a working farm on the remote west side of Islay. The wish was to use local ingredients as much as possible to make a real original Islay whiskey. Kilchoman is one of the few distilleries that does its own traditional floor malting. After the necessary opposition and setback, the first spirit ran out of the very small boilers at the end of 2005. On September 9, 2006, the very first official Kilchoman bottling was presented on Islay. Tasting note: color: gold. Nose: fresh notes of lime and citrus with pleasant sweetness of honey. Taste: delicious influence of the sweet Sauternes wine with recurring notes of lime and citrus with soft notes of peat. The finish is long with a pleasant sweetness and subtle peat smoke.
