Peat Week is the result of a 2001 experiment. Malt Master David Stewart and then distillery manager Ian Millar decided to distil a batch of heavily peated malt. Since then, the malt for Balvenie is dried with 100% Highland peat every year for a week (hence the name). The phenol content of the green malt is 30 ppm and the spirit is fully aged in American oak barrels. This limited edition was distilled in week 34 (August) 2003 and matured on American Oak casks for fourteen years. The whiskey was bottled without cold filtration at a strength of 48.3%. The Balvenie Distillery, built in 1892 by William Grant, is located north of the town of Dufftown near Glenfiddich. The name is derived from the nearby Balvenie Castle.
