Details
Nose is deeply cherry-like and spicy; but there is lots of walnut oil here also. Good depth, showing a dried-fruit or bakeshop impression.
Very sweet (a barley sugar sweetness), with liquorice or anise tones, and with a smoky, earthy aspect, some wood and nutty notes, and with a citric, malty, finish with traces of bitterness. Shows some heat on the midpalate.
.
This wine was made on this island since the Knights Templars headquartered there, where a hospital for injured Templars and escaped slaves required wine as an essential medicine. This must go back a thousand years and more.
Now let this very cloudy wine with its very fine sediment sit for a week plus, and it makes quite a difference.
The nose gains tremendous depth, with a molasses, almost PX-like, note, with dried raisin notes as well. Not a hint of volatile acidity.
