Close to Pouilly-Fuissé, almost in Beaujolais, are the vineyards of Chapelle aux Loups. Here, on the stony limestone soils, the chardonnay grapes that Maison Jadot buys for this Saint-Véran grow. The wine derives its freshness and fruitiness from a fermentation on steel, followed by an early bottling. This makes this Saint-Véran pale straw yellow in the glass, giving it subtle aromas of nuts and citrus. It is dry but round, even slightly filming on the tongue and as such very well suited to oysters and poached fish; as an aperitif more than surprising.
